Tasting note
Vinification of Quinta do Monte Xisto Wine: The grapes were harvested manually at the beginning of September and transported to the winery in 20kg boxes. They were vinified in lagares with foot treading. Fermentation took place over 6 days in the lagare with indigenous yeasts. This was followed by an 18-month ageing period in 600-litre barrels.
